This easy roasted parmesan asparagus will have the whole family excited about eating their veggies!
Vegetables are one of the most important foods for us to eat, but they are probably also the one food group we eat the least. The daily recommendation for vegetable intake is at least 2 1/2 cups, but we're often lucky to meet half of that recommendation in a day. When I ask clients, "do you eat vegetables every single day?" the answer is "no" more often than not.
I'd venture to say that one of the reasons we don't have more veggie-love in our lives is that sometimes it can be a little boring to eat them the same way all the time. How many of us grew
up eating plain boiled, steamed, or canned veggies at dinner each night? Not that there's anything wrong with that, but making vegetables "that boring thing we have to eat on the side" with
our meal means that we won't be very likely to enjoy them or go back for seconds.
So find what makes veggies interesting to you! For me, the absolute number one best way to eat almost any vegetable is roasted. I love that roasting veggies in the oven makes them
tender but also a little crunchy on the edges. I like to add plenty of seasoning for flavor - I almost always include garlic powder, a little salt, and plenty of pepper as a base, but
then I add dried herbs or others spices to jazz things up a bit.
For this recipe, I started with my usual base of salt, pepper, and garlic powder. Then I made the simple addition of finely grated parmesan cheese. The cheese gets all gooey and also crispy around the edges when it bakes with the asparagus, so when you're eating this dish, you get tasty cheesy surprises in each bite.
This is the perfect change to your normal veggie routine - watch in amazement at how much everyone in the family will love this dish! And if you get this in the oven right when
you start making dinner, it will be ready as soon as the rest of the meal is done. Happy veggie-eating!
Quick Roasted Parmesan Asparagus
Makes about 6 servings
Ingredients:
- 1 bunch asparagus, trimmed and cut into bite-sized pieces
- 1 tablespoon canola oil
- 1/4 cup finely grated parmesan cheese
- 1/2 teaspoon garlic powder
- salt and pepper to taste
Directions:
- Preheat oven to 425 degrees. Place all ingredients in a large bowl and toss to combine.
- Spread the mixture onto a lightly greased non-stick baking sheet, and bake for about 15 minutes or until the asparagus is slightly crispy and tender.
